Pumpkin Chocolate Chip Cookie

Pumpkin Chocolate Chip Cookie

Ingredients

  • 1.5 cups flour
  • 1/2 tsp baking soda
  • 1/8 tsp salt
  • 1/3 cup pumpkin purée (or butternut squash)
  • 8 tbsp brown butter
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp ginger
  • 1/8 tsp nutmeg
  • Pinch of cloves
  • 4-8 oz dark chocolate chopped

Instructions

  1. If using a pumpkin, wash, dry, and cut the pumpkin in half. Remove seeds and coat with oil.
  2. Pierce the outer side with a knife. Bake at 400F for 30 min until darker brown edges and fork can pierce through.
  3. Brown 8 tbsp of butter and let cool. Whisk together butter, spices, sugar, and pumpkin, set aside.
  4. In a large bowl, mix flour and baking soda. Add pumpkin sugar mix, and mix until just incorporated. Fold in chocolate chips or dark chocolate chunks. Refrigerate 2 hrs.
  5. Roll into a 1.5-inch ball and bake at 400F for 10-12 min.
  6. Remove cookies and let cool.
