Decadent Hot Chocolate

Ingredients
- 2 cups whole milk
- 8 oz good-quality dark chocolate, finely chopped
- 2 teaspoons brown sugar (optional)
- 1/2 teaspoon vanilla extract
Instructions
- In a saucepan over medium-low heat, combine the milk, sugar (if using), and vanilla extract.
- Optional: If you'd like a richer texture, add one egg yolk and whisk constantly to prevent curdling.
- Heat the mixture gently, whisking occasionally, being careful not to let the milk burn or boil.
- Once the temperature reaches 140°F (60°C), remove the saucepan from the heat.
- Add the chopped dark chocolate to the hot milk. Whisk until the chocolate is fully melted and the mixture is smooth.
- Pour the hot chocolate into mugs and top with whipped cream, chocolate shavings, or marshmallows, as desired.
Notes
- if using unsweetened (bakers or cooking chocolate) add 3 tbsp of sugar, more or less depending on liking
- for a creamier texture add one egg yolk, whisk together with warm milk to create a custard
- for a richer taste substitute 1/2 cup of milk for cream
