Banana Bread Muffins

Ingredients

  • 1/4 cup + 2 tbsp ghee or vegetable oil
  • ¾ cup dark brown sugar
  • 1 egg + 1 egg yolk, at room temperature
  • 1 tbsp vanilla
  • 3 very ripe bananas
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ teaspoon salt
  • ¼ cup walnuts or pecans, chopped (optional)

Instructions

  1. Pre-heat oven to 400F. Lightly grease a 9-by-5-inch loaf pan and set aside.
  2. In a medium size bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large bowl whisk together ghee (or oil), cinnamon, and nutmeg. Add sugar, whisk until sugar is dispersed.
  4. Add egg + egg yolk and mashed bananas, whisk until combined.
  5. Gently fold or stir dry ingredients into banana mixture,1/3 at a time, stir until just combined.
  6. Grease or line a muffin pan and pour 2/3 of the way up.
  7. Bake at 375F for 18-20 minutes or until tops are crisp and golden brown and a toothpick inserted into center comes out clean.
  8. Let cool in pan for 10 minutes, then remove from pan and transfer to cooling rack to completely cool before cutting. Enjoy!
