Banana Bread Muffins
Ingredients
- 1/4 cup + 2 tbsp ghee or vegetable oil
- ¾ cup dark brown sugar
- 1 egg + 1 egg yolk, at room temperature
- 1 tbsp vanilla
- 3 very ripe bananas
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- ½ tsp cinnamon
- ¼ tsp nutmeg
- ¼ teaspoon salt
- ¼ cup walnuts or pecans, chopped (optional)
Instructions
- Pre-heat oven to 400F. Lightly grease a 9-by-5-inch loaf pan and set aside.
- In a medium size bowl, whisk together flour, baking soda, and salt. Set aside.
- In a large bowl whisk together ghee (or oil), cinnamon, and nutmeg. Add sugar, whisk until sugar is dispersed.
- Add egg + egg yolk and mashed bananas, whisk until combined.
- Gently fold or stir dry ingredients into banana mixture,1/3 at a time, stir until just combined.
- Grease or line a muffin pan and pour 2/3 of the way up.
- Bake at 375F for 18-20 minutes or until tops are crisp and golden brown and a toothpick inserted into center comes out clean.
- Let cool in pan for 10 minutes, then remove from pan and transfer to cooling rack to completely cool before cutting. Enjoy!
